I am a patient guy
And normally I keep things to myself
But everthing has it's limit
Grandma is really reaching it's prime
We have to accept the fact coz that's life
But humans might lost it's limit
Grandma has been always negative
Each time we tried to make her happy
she always responds negatively
She never attacks me
But sometimes It's painful in my ears when she talks negative towards anything
be it my family, relatives, and things that crossed her mind
At times, I refrain from staying home often
all because of these reasons
but nowades I can't because I need rest after long day of school
Now, all I can do is tolerate and ignore all the comments
I cant do anything else
She's afterall...
My grandma
the one who raise me up to who I am today
I must never hurt her in anyway
Since I still can hold on, I will find some way to solve the matter as soon as possible
in a respectful way

The date marks the day that I'm turning 21 this year
And it is such an enjoyable moments when my sis decided to make a surprised dinner with my family...

The following week will commence the 1st day of the restaurant operation
I was station in the Baking & Pastry Kitchen for the 1st 3 weeks of the operations
and yesterday was our Mis en Place for our 1st operation
For those who don't know,
Mis en Place is describe for our preparation of the operation day
I have to say I had a good day with those mis en place yesterday
I was responsible for the pre-cooked food and item
Chef Lilian is our instructor and she such a nice person
She is really professional and treat everyone with respect
She guided us on quite number of dishes that we have to make
Yi Jie was with me too
Yay!
its soo good to have my partner working together in the same role
Simply because we both understand one another
=)
First we made Biscotti
hahas
Actually the Biscotti was already been baked
so our job was to cut it in slices
yeah, big deal right
But I'm telling you it is NOT easy
Its fragile
one wrong and you crush the whole biscuit
But good for us, we did a good job
:D
After that, we did something soo good!
We made our own chocolate !!!
HAHAHAS !!!
We tempered the chocolate till it crystallize
which gives a shining appearance of the chocolate
that makes the humans go "Yummy ! Chocolates !"
XD
So, done with the chocolate then we soak the biscotti with that chocolate
and left it to dry
gosh!
I really cant believe that I actually do something so good !!!
Last but not the least,
Chef Lilian instruct us to make glazed chocolate
yeah, we make another chocolate
Wooohooo !!!

Firstly, we soaked the gelatine in the ice cold water
While waiting the gelatine to get submerged,
we then start boiling the mixture of water and sugar
once it bring to a boil, we start adding the cocoa powder and cream
gosh, the smell...
It's so fragrance
After everything dissolved we add the gelatine and stir for awhile
and slowly we drained it and let it cool and stirring occasionally
hehe
other than that
we made lemon zest with glazed sugar
and it's so good
HAHAHAS

After three weeks of Skills Camp,
I am so happy to hear my first ever compliments from Chef Jason
Well, it might just words to you...
but for me, It is the greatest moments ever
He's been very hard and without a doubt extreme strict towards me
And it is really worth the whacking !!!
Because yesterday skills test, I finallly made him pleased with my main course
I was assigned to make a Puree of Potato Soup for my soup
and Deep Poached Salmon in Bearnaise Sauce with Glazed Carrots & Saute French Beans and Pilaf Rice as my main course
My puree was just a satisfactory for him but it was okay after he gave me a constructive feedback to make it even better
And of course he was impressed with my main course
"Firstly, I have to say I like ur food presentation as it was very need and I feel like having a very good meal.
Your fish was well cook Adam. By looking at the texture, it's very tender and tasty.
Finally you did your glazed carrot well. Crunchy and sweet. That's what I want from my carrots.
Too Bad Adam, your French Beans is too salty.
(yeah, he criticised my beans but as usual, he gave me a good feedback to adjust the seasonings and I'm truly respect that)
hmm... Nice and fluffy Pilaf Rice you got for me. Very Good Adam
Well.... Overall, A great performance from you Adam but I have to say the marks pull you down because of your Bearnaise Sauce.
But anyway....
I Had a very good lunch today.

I am soo flattered with my performance during the test
my hardwork really paid off well
this will definitely made me sleep peacefully during the weekends

Yesterday marks the end of Skills Camp
Next week will be Kitchen Orientation and I am looking forward to it

The 1st 2 weeks has been...
well....
it really is an eye opener in the kitchen life
Everything has to be in tip-top performance
and yeah
rumours are true
it's either you have it or not
As for me...
things has been alright for me
when you were trained disciplined from young, things will be just fine
I really happy that my parents treat me well
and I fully understand on what discipline is all about
In the kitchen I have to say that my performance are inconsistent
one dae I'm perform brillliantly
and the following is disastrous
well, that's life
you can't expect all things to be in your way
But I do treasure
Simply because, I learned what's right from wrong
Chefs in the academy does make things hard for us
But, I do appreciate of what they have done to me
Because I've learned a lot from them
It just got me even hungrier to excel the hell in the kitchen
everyday i got criticised, and i will learned
and when the time i got it right, they praised me
especially a praise by Chef Jason
I think among all chefs in TCA, he is one who is hard to please
and getting praise by him, it is really worth the effort
thank you Chef Jason for being hard on me...
Coz you made me learned from my mistakes
Yi Jie is my partner in the kitchen station
And I do like her
Though we dun perform the 1st dae
We still believe one another and kick some ass
the following day onwards
it just getting better and better
She is definitely an important person to me
and we will always be there to help things out
I am really happy to have a good teammate like herself
XD
Well.... I'm still survive for the 1st two weeks
and I can't wait for the third
I will keep on improving myself no matter how it takes
coz I know I'm in the correct path
=)
