Stab Me With Your Knife

The following week will commence the 1st day of the restaurant operation
I was station in the Baking & Pastry Kitchen for the 1st 3 weeks of the operations
and yesterday was our Mis en Place for our 1st operation

For those who don't know,
Mis en Place is describe for our preparation of the operation day

I have to say I had a good day with those mis en place yesterday
I was responsible for the pre-cooked food and item
Chef Lilian is our instructor and she such a nice person

She is really professional and treat everyone with respect
She guided us on quite number of dishes that we have to make
Yi Jie was with me too
Yay!
its soo good to have my partner working together in the same role
Simply because we both understand one another
=)

First we made Biscotti
hahas
Actually the Biscotti was already been baked
so our job was to cut it in slices
yeah, big deal right
But I'm telling you it is NOT easy
Its fragile
one wrong and you crush the whole biscuit
But good for us, we did a good job
:D

After that, we did something soo good!
We made our own chocolate !!!
HAHAHAS !!!

We tempered the chocolate till it crystallize
which gives a shining appearance of the chocolate
that makes the humans go "Yummy ! Chocolates !"
XD

So, done with the chocolate then we soak the biscotti with that chocolate
and left it to dry
gosh!
I really cant believe that I actually do something so good !!!

Last but not the least,
Chef Lilian instruct us to make glazed chocolate
yeah, we make another chocolate
Wooohooo !!!

Firstly, we soaked the gelatine in the ice cold water
While waiting the gelatine to get submerged,
we then start boiling the mixture of water and sugar
once it bring to a boil, we start adding the cocoa powder and cream
gosh, the smell...
It's so fragrance

After everything dissolved we add the gelatine and stir for awhile
and slowly we drained it and let it cool and stirring occasionally
hehe

other than that
we made lemon zest with glazed sugar
and it's so good

HAHAHAS
